Mexican Ramen Hash Browns
Ingredients:
6 ounces sliced roast beef (cut into thin strips)
½ lb potatoes (cubed)
1 cup cheddar cheese (shredded)
2 green onions (sliced)
4 tablespoons milk or cream
1 package ramen noodles (without the flavor pack)
¼ teaspoon garlic powder.
Spices: ½ teaspoon salt, 1 tsp dried oregano, ½ tsp pepper and ¼ tsp chili powder.
Directions:
In a large bowl combine beef, potatoes, cheese and green onions. In a separate bowl, mix together milk or cream and the flavor packet from the package of ramen noodles (discard the actual noodles). Pour this mixture over the beef mixture and blend well until it is moistened.
Grease a frying pan with some oil and add the mixture from the bowl. Cook over high heat for about 10 minutes, turning it occasionally to brown evenly on all sides.
When you see that there is no more pink in the meat, add some water (about a cup) and cover the pan with a lid or foil. Turn down the heat slightly and simmer for about 10 minutes.
Remove the lid and turn up the heat again to remove all excess liquid. Add spices and allow to cook over high heat until it’s dry, stirring occasionally for another 5 minutes or so to brown evenly.
Divide the hot mixture into 4 equal portions and place each in a separate bowl. Sprinkle some pepper on top and add ½ cup of water to each.
In a separate frying pan, heat some sesame oil over high heat. Break the ramen noodles in half and fry them in the hot oil for about 5 minutes or until they turn golden brown and crispy.
Add 1 teaspoon of salt and garlic powder to each bowl of beef mixture. Mix well and top with crispy noodles.
